Fontina Valdostana Dop d'Alpeggio 1/4 in shape

The Valdostan Fontina DOP mountain cheese is one of the best cow’s cheeses in Italy. Unfortunately, it is also among the most imitated. The production area is exclusively the autonomous region of Valle d’Aosta, above 2000 meters, in pastures rich in forage essences that provide the cheese with a wide range of flavors and aromas.

This delicious cheese is also among the most known for its ability to melt and become creamy. It is widely used in the kitchen for filling and seasoning delicious dishes, but also to be enjoyed fresh at the table.

PRODUCTION

Fontina is made using milk from Valdostan cattle such as the Pezzata Rossa and the Pezzata Nera. This cheese undergoes a minimum aging of 3 months in dark, humid places, often obtained by excavating tunnels or utilizing ancient mines. Its processing technique absorbs almost all lactose, so it can be defined as lactose-free.

The Fontina Valdostana d'Alpeggio 1/4 of a wheel weighing 2,250 kg can be used to fill polenta, as done in its regions of origin. Excellent for the recipe of Valdostana fondue, to which milk and eggs should be added to prevent lumps from forming. Spectacular with the addition of a sprinkle of white truffle, for extrasensory experiences.

TASTING

It features a compact, thin crust and a soft, buttery, melting paste, with a slight eye formation resembling that of a partridge, in color from straw yellow to intense yellow. It has a sweet and enticing flavor, with pronounced herbal notes due to the many aromatic herbs present in the pastures of Alpe Gemme, and a rich bouquet of aromas that develops during cave aging.
