The Pecorino Romano DOP, certification obtained in 1996, is an ancient cheese from the Lazio tradition. The earliest written records indicating the existence of Pecorino Romano date back to the Roman Empire in the writings of authors such as Pliny the Elder.
Originating from the Agro Romano, Pecorino Romano is a cooked pasta cheese produced exclusively with fresh sheep's milk; the type of rennet used also gives this cheese its characteristic aromas. Aged for at least 5 months, the Pecorino Romano that will arrive at your home thanks to Spaghetti & Mandolino is 8 months aged, making it ideal for grating.
In Roman times, it was the main food in the diet of legionnaires and soldiers as it could be preserved for a long time, not to mention its high nutritional value.
The paste of Pecorino Romano is white or pale straw yellow, and its flavor is strong, salty, and pleasantly spicy. Its aroma features typical aromatic notes of pecorini but also has vegetal and herbal scents.

A surprising fact is that the majority of Pecorino Romano, about 97%, is produced in Sardinia, a land famous, among other things, for its shepherds who mainly raise sheep. Although this is a cheese typical of Lazio, this circumstance has created strong tensions between the few remaining producers from Lazio and the majority of producers from Sardinia.
This controversy has escalated to the point of involving the Consortium for the Protection of Pecorino Romano Cheese, ironically located in Macomer in the province of Nuoro, right in Sardinia, which is accused of favoring only Sardinian producers by allocating them significantly larger funds.
