The BIO Fennel Salami from the Pedrazzoli Salami Factory is an ancient cured meat from the Tuscan tradition.
The recipe follows the ancient Tuscan peasant tradition, which includes the addition to the mixture, made from selected parts of ham, pancetta, guanciale, and pork shoulder, of wild fennel, which is much more aromatic and flavorful.
The Pedrazzoli Salami Factory, for the production of this cured meat, uses the small-seed variety of wild fennel.
The peculiarity of the BIO Fennel Salami is certainly its completely organic production, which allows the salami to be free of dairy derivatives and added preservatives.
