Organic pre-cooked Cotechino 250g

The history of Cotechino is a debate in Italy. The people of Friuli claim it is their invention, while the Modenese retort that Cotechino belongs to them and that is not up for discussion. There are dozens of these friendly rivalries in our country, which signifies that Italy is the homeland of cured meats. Surely, the art of placing meat in a casing to preserve it is ancient and tied to the tradition of butchers, even those of Celtic origin. The Pedrazzoli organic Cotechino contains only pork and rind, and its recipe depends on the various regional traditions of northern Italy. The use of spices is a secret recipe. The first written recipe that provides a general indication is that of Pellegrino Artusi in 1910, the famous recipe no. 322 for Cotechino Fasciato.

Salumificio Pedrazzoli, Lombardy

Pedrazzoli is the first salami producer in Italy to produce BIO. Since 1996, it has added this segment, which becomes more and more important each year. Cereals and food products come from organic farming, free-range breeding, drastic reduction of preservatives, GMO-free, and limited intake of salts and fats. The entire production is particularly suitable for the diet of celiacs and the dietary regime of intolerant individuals. Many of these cured meats are listed in the national pharmaceutical compendium for celiacs.

The Bio Primavera line was awarded in 2013 in Paris with the prestigious Good Pig Honorary Mention during the Animal Welfare Awards. The ceremony featured the entire European market, and Italy was represented by the Pedrazzoli family. The Good Pig Honorary Mention was awarded for “the commitment to the welfare of sows, demonstrating how it is possible to make choices in favor of animal welfare as well.”
