Whole seasoned salamina delle nebbie

The Salamina delle Nebbie is one of the charcuterie of the tradition of the province of Ferrara.

It is produced by grinding various parts of the pig such as the neck cap, cheek, the lean part of the scraps from the processing of the thigh and the shoulder, with the addition of small amounts of tongue and liver. To the mixture of salama da sugo, salt, pepper, and nutmeg are then added. The aging process lasts between 8 and 10 months.

Whole seasoned salamina delle nebbie: use in the kitchen

The Whole Salamina of the Mists is traditionally cooked while suspended in water so it does not touch the bottom. The best accompaniment is a potato puree or liquid pumpkin.
Famous is the risotto with leeks and salama da sugo. Ideal when enjoyed with the Coppia Ferrarese, the typical twisted bread from Ferrara. Wine to pair: Lambrusco or Valpolicella.


TASTING


Dark brown sausage with a spherical shape, “like a melon,” tied with string into 6/8 wedges. The outer surface is irregular, with a firm and compact texture. Extremely intense and aromatic aroma. On tasting, the salama is soft and gritty, with a full flavor that lingers over time thanks to the well-balanced aromas.
