Durum wheat of the Khorasan variety, an ancestor of modern grains, originated in the Middle East thousands of years ago. Expertly crafted by the master pasta maker, during cooking it releases its gentle fragrance of white flowers and peeled dried fruit, while the taste adds clear evocations of pine nut and macadamia with vegetal hints of edible flowers.

The Kamut rigatoni by Felicetti are excellent for vegetable-based sauces such as zucchini, Jerusalem artichokes, asparagus, and leeks. They are also well-suited for a meat sauce made with Chianina IGP meat, whether red or white.
