Do you remember the fertile crescent? That large area in the Middle East that gave birth to important products that are still contemporary and essential today. Well, about 8000 years ago this ancient species of large spelt, called Spelta, was produced. Triticum spelta has a shape very similar to soft wheat and a significant amount of gluten and especially fiber. Spelt in general is naturally resistant to weather agents and pests. This means that there is a complete absence of synthetic pest control treatments and fertilizers. It is rich in proteins (14%) and vitamins A, B, C, E, minerals, potassium, calcium, phosphorus, magnesium, iron, manganese, and fibers that help intestinal peristalsis and thus facilitate the digestibility of the product.
