However, Kamut is also the name of the American company founded in Montana by Bob Quinn, an organic farmer and doctor in plant pathology. The term Kamut should always be followed by the registered "R" to indicate a protected trademark. The generic term Khorasan instead refers to the cultivar registered on December 30, 2003, also in Montana by the USDA. Khorasan is the name of the Iranian region from where this grain originates and where the first kernel arrived in 1921. Nutritionally, it is rich in zinc, magnesium, and selenium. The grain is 2-3 times larger than durum wheat grains and therefore contains higher amounts of proteins, vitamins, amino acids, and minerals. It contains gluten, although in minimal quantities, and thus can be preferred by individuals who have some difficulty tolerating gluten.
