It can be considered the favorite cereal of populations in cold climates. In Italy, it is particularly cultivated among the Dolomites of South Tyrol, and its use is exploited for numerous types of bread preparations. Rye is a very ancient cereal also originating from the ancient Fertile Crescent in the Middle East, where it was initially regarded as a weed among more noble crops. Gaetano Mirandola sources this Rye from the best place where the farming culture of cultivation still perseveres: South Tyrol. Its flavor is strong and characteristic. Molino Rosso mills it with stone and retains the wheat germ oil inside, which represents an extraordinary hyper-vitaminic source of nutrition.
