Triticum spelta has a shape very close to that of soft wheat and contains a significant amount of gluten and especially fibers. Spelt, in general, is naturally resistant to weather agents and pests. This results in the complete absence of synthetic pest control treatments and fertilizers. It is rich in protein (14%) and vitamins A, B, C, E, minerals, potassium, calcium, phosphorus, magnesium, iron, manganese, and fibers that aid intestinal peristalsis and thus facilitate the digestibility of the product.
