Decorticated buckwheat from organic farming, clean and screened. 
Buckwheat is a good source of fiber and minerals, especially manganese and magnesium, and it is naturally gluten-free.
It is a balanced food as it contains a significant amount of iron and vitamin B, various minerals (especially magnesium) and especially vitamin E. The biological value of its proteins is comparable to that of meat and soy proteins.

The sweet little boat resting on the Menago stream welcomes all those who arrive for the first time at the Antico Molino Rosso of Gaetano Mirandola. A suggestive image that captures the essence of this beautiful Organic reality of producing high-quality flours and cereals. Water, earth, man. The virtuous triangle that generates life. Gaetano Mirandola has always been recognized as one of the most active and important ambassadors and communicators of BIO value in Italy. Starting from the province of Verona, from lands unknown to most, with a centuries-old cereal vocation among ancient riverbeds, products from the old paths of the Adige and its branches in ditches and streams that have served local populations and their crops. Once, the lowlands of Verona had many mills, and even today there are important testimonies like that of Molino Rosso. Gaetano Mirandola created a laboratory company of ideas in these places long before it became a real dusty mill of flours and cereals. Here was born his idea of food balance based on knowledge. A value that concerns not only his company but especially those who operate on those lands to produce in a healthy and responsible manner, respecting the environment and its integrity. A strong action of awareness and communication towards cereal-producing companies, bakers, and all artisans who worked with those flours. An effort that has borne fruit and today has changed the way the quality of mill products is perceived among operators and, increasingly, among consumers.
