Organic rye tortiglioni 500g

It can be considered the preferred cereal of populations in cold climates. In Italy, it is particularly cultivated among the Dolomites of South Tyrol, and its use is exploited for numerous types of bread preparations. Rye is a very ancient cereal, also originating from the ancient Fertile Crescent of the Middle East, where it was initially considered a weedy plant among other more noble crops. Gaetano Mirandola sources this cereal from the best place where the peasant culture of cultivation still perseveres: South Tyrol. Its flavor is strong and characteristic. Antico Molino Rosso mills it with stone and retains the wheat germ oil inside, which represents an extraordinary hypervitaminic nutritional source.
To enjoy pasta as per good Italian tradition, it is handcrafted, drawn through bronze slowly, reaching a maximum temperature of 36 degrees and dried on wooden frames for a full 36 hours.

Organic rye tortiglioni 500g: How is it produced

Antico Molino Rosso, Veneto

The sweet little boat resting on the Menago stream welcomes all those arriving for the first time at the Antico Molino Rosso by Gaetano Mirandola. It’s a captivating image that embodies the essence of this beautiful organic reality of high-quality flour and cereal production. Water, earth, man. The virtuous triangle that generates life. Gaetano Mirandola has always been recognized as one of the most active and important ambassadors and communicators of BIO value in Italy. Starting from the province of Verona, from lands unknown to most, with a centuries-old cereal vocation among ancient riverbeds, products from the old paths of the Adige and its branches in ditches and streams that have served local populations and their harvests. Those were lands with many mills in the past from lower Verona, and even today there are important testimonies like those of Molino Rosso. Gaetano Mirandola has created an idea laboratory here long before it became a true dusty mill of flour and cereals. Here, he developed his idea of dietary balance based on knowledge. A value that concerns not only his company but especially those who work the land to produce in a healthy and responsible manner, respecting the environment and its integrity. A strong action of raising awareness and communication towards cereal-producing companies, bakers, and all the artisans who worked with those flours. An effort that has borne fruit and today has changed the way quality of milled products is conceived among operators and, increasingly, among consumers. When you buy a flour from Molino Rosso, you are participating in a process of environmental, economic, and productive sustainability. All while respecting human rights and the cleanliness of creation. Gaetano Mirandola has accustomed the communication world to speak of biodedicated companies, that is, realities that produce only what they can based on the seasons and what Mother Nature reserves each year. There is nothing chemically forced. Nothing stressful for nature and plants. It is a new concept that brings man closer to the earth and makes him a part of its essentiality. We have made the selection of products together with Gaetano, who has reserved an exclusive that enriches our virtual shelves; that sixth sense that every form of life has… its soul.
