The leek is one of the vegetables used as a base in Venetian cuisine and not only. If we read its name in Latin (Allium ampeloprasmum) we understand that it is a particular type of garlic. It is a herbaceous monocot plant that produces very beautiful, round white flowers in a kind of umbrella. The leek is considered a warming food in nutraceuticals, making it especially good in the winter season. It also has diuretic and detoxifying properties.
The leek grown by Erica Fontana is similar to the sweet and long variety from Carmagnola, and indeed its sweetness is very pleasant.

Leek cream is one of our favorite appetizers! We use it directly on bruschetta with spices like pepper or coriander. Alternatively, the same cream could be used to dress risottos or vegetable soups, used during cooking or at the end.
We can also recommend it paired with salmon: for example, as a dressing for stuffed pasta parcels, or a generous spoonful as the base of a dish with baked smoked salmon.
