TYPICAL TRENTINO AND SOUTH TYROLEAN PRODUCTS


Among these beauties, cuisine and typical productions are affected by ancient traditions and a history that is linked to Saxon and Germanic territories. A deep bond links South Tyrol with Tyrol and Austrian peasant culture. A factor that makes itself felt in the production of very local specialties that, however, have managed to conquer tables all over the world. Just think of Speck from Alto Adige PGI or the Puzzone di Moena PDO cheese from Val di Fassa. In both cases, the products have managed to create very large international markets. These are also phenomena that have given way to meat processing that seeks to simulate its characteristics.

But only the aromatic herbs of these places, their purity, their rarity, only this pure air and these rock cellars can refine these products, guaranteeing inimitable flavors and aromas. Trentino Alto Adige is the home of apples. The first PDO for this fruit in Europe was established in Val di Non followed later by the South Tyrolean Apple IGP, in particular the Val Venosta. The ones with the ladybug. Another PDO cheese is Spressa delle Giudicarie.

In Trentino, one of the most important Italian oenological schools, the Institute of San Michele all'Adige, has existed for years, from which the most brilliant Italian oenologists come out. It is precisely in this valley that Teroldego Rotaliano is produced, which together with Marzemino represents the typicality of the grapes of the Province of Trento. South Tyrol, on the other hand, is characterized by the production of Lagrein and Pinot Noir, in addition to international ones such as Merlot and Cabernet Sauvignon. Very interesting is the pink Moscato, which is at its best here.

To conclude, two extraordinary products that are part of the Trentino tradition, Mortandela and Salà Trentino meat. The latter is in particular typical of the areas north of Lake Garda, while the former typical of Val di Non is protected by a Slow Food Presidium.
