This small mountainous strip of Italy was the land of passage of the great Hannibal, a defense camp and then a Roman city of great prestige, the ancient Augusta Praetoria. In Valle d'Aosta, the dialect spoken is decidedly French-speaking and everything here is linked to Savoy. There are not many typical DOP, IGP, STG certified products in this region, but those that can bear this definition represent excellence recognized all over the world. Above all, Fontina DOP, which, due to its characteristic scent and propensity for fusion, finds a particularly versatile use in kitchens around the world. The Vallèe d'Aoste Lardo d'Arnad DOP that finds its pleasure, thanks to the typical aromatic herbs that can be found in the meadows and among the rocks of the high peaks of Aosta Valley. Other DOP products are Vallèe d'Aoste Jambon de Bosses and Fromadzo. On the other hand, there are many traditional Aosta Valley products that revive succulent and simple mountain cuisine.
