The Prosecco Superiore Valdobbiadene DOCG Dry Selezione Bottiglia Nera by De Faveri Spumanti is a truly elegant wine, with a pale straw yellow color, intense fruit aromas, and a pleasant taste. De Faveri obtains it from the selection of its best Glera grapes from the high hillside vineyards in the municipalities of Valdobbiadene and Vidor.
Training system: Cappuccina with a planting density of 3x1 and Guyot with a planting density of 2.80x1.
Harvest period: second half of September.
Vinification: white in stainless steel.
Second fermentation: with selected indigenous yeasts at controlled temperature for 25-30 days.
Spumantizzazione: Italian method (Martinotti) with second fermentation in stainless steel autoclave through natural fermentation.
Perlage: fine and persistent.
Color: light straw yellow.
Bouquet: fresh, slightly sweet, harmonious.

For the same reason, it pairs wonderfully with the traditional Venetian sarde in saor.
